In this newsletter we want to briefly discuss antioxidants.
The top twenty antioxidant-containing foods as determined in the largest (to date) USDA study are here listed, in order (Published in the June 9, 2004 Journal of Agriculture and Food Chemistry):
1. Small red bean (Mexican red bean), dried, half cup
2. Wild blueberry, 1 cup
3. Red kidney bean, dried, half cup
4. Pinto bean, half cup
5. Blueberry, cultivated, 1 cup
6. Cranberry, 1 cup (whole)
7. Artichoke, cooked, 1 cup of hearts
8. Blackberry, 1 cup
9. Prune, half cup
10. Raspberry, 1 cup
11. Strawberry, 1 cup
12. Red delcious apple, one
13. Granny Smith apple, one
14. Pecan, 1 ounce
15. Sweet cherry, 1 cup
16. Black plum, one
17. Russet potato, cooked, one
18. Black bean, dried, half cup
19. Plum, one
20. Gala apple, one
Antioxidants are important in reducing the progress of many degenerative disorders including cardiovascular disease and arthritis. They are also implicated in protecting against cancer promoting substances.
The list here given illustrates the health benefits of a vegetarian diet and points to the health properties of beans, berries, apples and potatoes.
